These Boots Were Made for Walking… Tacos!
I love going to the state fair. Ahh, I can smell the cheese curds and corn dogs now just writing this! I usually eat healthy, but when it comes to the state fair, I have no problem shaking things up and “treating” myself!
See, state fair food vendors know that we want to move around and munch rather than sitting at a table (there’s so much to see!). Walking tacos are always on my must-eat list.
I was looking at the Taste of Home website (LOVE checking this site out for cooking tips!) and saw this. I knew I had to bring a little bit of my state fair to you, and share this recipe from Beverly Matthews from Pasco, Washington. She writes, “These walking tacos are great for an on-the-go dinner, campfire meal or easy game night supper. The ingredients transform a bag of chips into a taco in a bag!”
Ingredients for 5 walking tacos | Multiply by degree of hunger, divide by number of girlfriends!
Walking Tacos
Meat mixture
- 1 pound ground beef
- 1 envelope reduced-sodium chili seasoning mix
- 1/4 teaspoon pepper
- 1 can (10 ounces) diced tomatoes and green chiles
- 1 can (15 ounces) ranch style beans (pinto beans in seasoned tomato sauce)
Other things you’ll need
- 5, one ounce packages of corn chips
- Shredded cheddar cheese, sour cream, and sliced green onions for toppings
Directions
Step 1
Use a large skillet to cook beef until no longer pink, about 6-8 minutes. Break into small crumbles. Drain.
Step 2
Stir in chili seasoning mix, pepper, tomatoes, and beans. Bring to a boil.
Step 3
Reduce heat. Simmer uncovered, stirring occasionally until thickened, about 20-25 minutes.
Step 4
When you’re ready to serve, cut open a bag of corn chips. Spoon in 3-4 tablespoon of beef mixture.
Step 5
Hand the bag to your friend and have her add the toppings of her choice!
