Pour on the Batter for Breakfast, Ladies!

If I had to pick only one meal to make each day, it would be breakfast. There are so many possibilities, so for Giada wannabes like me, breakfast makes cooking easier. That’s why I chose this recipe— I found it on the Kalamazoo, Michigan site. When I saw beer as an ingredient, Sheryl Crow’s 90’s hit All I Wanna Do popped into my head…

 “I like a good beer buzz, early in the morning...” 


Even though I like to believe I’m creative, I’ve never thought about using beer as a breakfast food ingredient—until now. I don’t think these waffles would give you a beer buzz, but you never know! 


Making waffles always feels like home to me. But what if you don’t have a waffle iron or maybe you just want something quick, easy, healthy? Try Lopaus Point Waffles! Stacie Skinner, the owner and lead waffle babe has created four delicious, gluten free flavors: banana flax, blueberry, chocolate chip, and my favorite, pumpkin spice. Honestly, you can’t go wrong. But if you love breakfast, beer, waffles, or even Sheryl Crow, you have to make these during your next girl’s weekend. 

 



Ingredients for 6-8 waffles | Multiply by degree of hunger, divide by number of girlfriends!


  • 4 tablespoons unsalted butter, plus extra for greasing the waffle maker
  • 1 cup buttermilk or milk
  • 1 cup stout
  • 2 1/4 cup all-purpose flour
  • 3/4 teaspoon sea salt
  • 4 teaspoon baking powder
  • 1 1/4 teaspoon baking soda
  • 2 tablespoons sugar
  • 1 1/2 teaspoons cinnamon
  • 1/8 teaspoon cardamom
  • 2 eggs
  • 1 1/2 teaspoon vanilla

Directions


Step 1 

Melt butter in a medium pot over low heat. Add buttermilk and stout, stir and heat until warm. Turn off the heat.

Step 2 

In a large bowl, add flour, sea salt, baking powder, baking soda, sugar, cinnamon and cardamom. Whisk to combine.

Step 3 

In another large bowl, whisk eggs until well beaten. Add vanilla and whisk to combine. 

Step 4

Pour about one cup of the butter/buttermilk/beer mixture into the eggs and whisk vigorously to combine. 

Step 5 

Pour the rest of the warm butter/buttermilk/beer mixture into the bowl while whisking constantly.

Step 6 

Add the liquid mixture to the dry mixture and stir with a wooden spoon until the flour disappears, but the batter is still a little lumpy. Take care not overmix, but make sure the flour is incorporated. Let the batter sit as your waffle iron heats up.

Step 7 

Spread a thin coat of butter on the preheated waffle iron to prevent the waffles from sticking. Pour batter into the waffle iron and cook until waffles are golden brown. Serve immediately with real maple syrup.
